Margie's Pineapple Upside Down Cake
1/4 cup butter
1 cup packed brown sugar
1 20oz can sliced pineapple (drained and reserve juice)
1 6oz jar maraschino cherries (drained)
1 package yellow cake mix
oil and eggs as called for by cake mix package directions
Preheat oven to 350 degrees
Melt butter in 13x9 pan in oven
Sprinkle brown sugar evenly over butter
Arrainge pineapple slices and cherries over top (press gently)
Add enough water to pineapple juice to measure 1 1/4 cups
Make cake batter as directed on package (use juice instead of water)
Pour batter over pineapple and cherries
Bake 40 to 45 minutes until toothpick comes out clean
Immediately turn pan upseide down onto heat-proof serving plate
Leave pan over cake for 1 minute
Serve warm or cool
Store loosely covered
