Moules Fromage Bleu (Blue Cheese Mussels)
This recipe was absolutely amazing!!! We used smaller mussels which turned out to be more tender and less chewy. Even the kids liked it.
Original Recipe
1 1/4 lbs mussels (PEI if possible)
4 tbsps oil (40% olive - 60% canola)
1/3 cup diced bacon
1/3 cup sliced shallots
1/4 cup bleu cheese
1/3 cup white wine
Juice of 1 lemon
1/3 cup baby spinach
sea salt (to taste)
fresh ground pepper (to taste)
Heat oil, cook bacon until slightly browned.
Add shallots and mussels and toss together.
When mussels open add 1/2 bleu cheese, melt into broth.
As soon as all open, toss in spinach.
Season to taste.
