Green Chili Cheeseburgers
Found this on the Food Network website. It is a Bobby Flay recipe from his Throwdown show. Was not sure how it would turn out, but it was KILLER!!!!
Green Chile Burgers
2 pounds ground chuck, 80 percent to 85 percent lean
1 teaspoon salt
1 teaspoon fresh ground black pepper
6 slices of cheese (provolone, jack, muenster, mozzerella)
6 hamburger buns, toasted
Green Chili Sauce, recipe follows
lettuce (romaine)
6 slices of tomato
Directions:
Heat grill to high. Place burgers on grill and cook until charred on both sides and cooked to desired doneness. Place slice of the cheese on each burger, close the lid for about 1 minute (until the cheese has just melted). Place burgers on toasted buns and top with a few tablespoons of Green Chile Sauce, lettuce, and tomato. Spread small amount of mayonaise on top bun and place onto burger.
Green Chile Sauce:
2 poblano chiles
1 medium white onion
2 cloves garlic, chopped
2 tablespoons oregano leaves (or 1 tablespoon powder)
1/4 cup cold water
1 tablespoon honey
olive oil
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
Slice onion into about 4 slices. Drizzle with olive oil and season with salt & pepper.
Cut stem end off of poblano chiles and de-seed.
Grill onions & chiles over medium heat. Turn peppers occasionally.
Remove onions after about 5 mins. Remove peppers when skin is blistered well (10 mins).
Remove skin from chile. Chop onions and chiles.
Place all ingredients in a blender and blend until smooth. Season with salt and pepper, to taste.
Refridgerate for atleast 15 mins before using.
